Philosophy
We begin on the vineyard slopes, cultivating the vines, protecting
the natural hillside through sustainable farming techniques and
following nature’s lead as the growing season unfolds. As harvest
begins, our winemaker walks the vineyard rows to hand select the
fruit at the peak of ripeness. In the cellar, quality and purity
are never compromised at the hands of convenience. Newton Unfiltered
Cabernet Sauvignon is fermented with wild yeast, native to Newton’s
Spring Mountain estate, and is bottled unfiltered to preserve the
natural fruit essence and to foster the wine’s unique aroma and
flavor. This exceptional dedication to nurturing the richness that
nature provides allows Newton Vineyard to produce wines of
brilliance and purity.
Tasting Notes
This full-bodied and balanced wine exhibits classic Cabernet
Sauvignon characters of black currant accented with a touch of
herbal complexity and sweet, smoky oak. Aromas of cigar box and
white pepper are supported by dense black fruit flavors and herbal
notes which linger on the finish.
Food & Wine Pairing
Winemaker Chris Millard suggests pairing the complex layers of
flavors in this Cabernet Sauvignon with a grilled New York steak.
It is also a perfect accompaniment to roasted game meat like
boar.
